J.Luis “Chele” Gonzales describes his kitchen as modern Spanish with a twist of Filipino. I met him at the farmers market in Manila and got the chance to come along with him during his grocery shopping. Later on we’ve seen each other in his restaurant „Gallery Vask“ (The World’s best 50 Restaurants) where I not only got the exclusive possibility capturing him working in the kitchen, I also got the chance to degust his awesome compositions and having a few beers together with him at his roof top terrace in downtown of Manila.
